INDIAN POTATOES AND CAULIFLOWER

INGREDIENTS

 

• 2 cups sliced potatoes
• 1 medium cauliflower
• 8 oz tomato sauce
• 1/4 c water
• 1 Tbsp oil or Ghee (clarified butter)
• 2 Tbsp Garam Masala
• 1 tsp ground turmeric
• 1-2 tsp salt
• Optional: 1 Tbsp fresh cilantro, for garnish

DIRECTIONS

  • Wash vegetables. Slice potatoes ~ 1/4 inch thick. Cut the cauliflower, keeping the florets on the larger side.
  • Add the oil or ghee to a large dutch oven on med-high heat. Add the potatoes, garam masala, turmeric, & salt. Sauté for 5 minutes, stirring occasionally, until they are browned. If the potatoes stick, add water and cover with a lid.
  • Add the water and tomato sauce, stirring well to scrape the seasonings from the bottom of the pot.
  • Add the cauliflower and cook for 10 minutes until the vegetables are tender.
  • Garnish with chopped cilantro (if desired).
